Marshmallow Fondant for Cold Weather Feeding

1-16 oz. bag mini marshmallows
4 Tbsp. water
Butter or Crisco for greasing bowl and utensils
Confectioners’ Sugar

Combine the marshmallows and water in a microwave safe bowl and microwave on high for 1 minute. Stir the mixture and return to the microwave and continue to cook in 30 second increments (stirring in between each) until the marshmallows are all melted. Stir in ½ cup at a time of confectioners’ sugar and mix with a spatula until dough is too stiff to stir by hand.

Grease the bowl and dough hook of a stand mixer or your hands and counter. Do not skip this step! It will make cleanup so much easier. If no mixer is available, knead by hand. Begin kneading the remainder of the powdered sugar into the marshmallow mixture and continue until all of the confectioners’ sugar has been used or until the dough is very stiff and not at all sticky. Place desired amount on a sheet of waxed paper or parchment paper and place in hive (paper side down) onto the top bars above the cluster. Makes about 3 lbs of fondant.
